Definition

Volume of water added to the kettle volume. This is usually done to make up for evaporation losses, adjust the final gravity of the wort (dilution), or to compensate for a small kettle size. Extract brewing often involves topping off a concentrated wort boil to increase the wort volume to the final volume added to the fermenter.
